Pizza Dinners

Hey Folks, Josh here. I LOVE pizza. Really, I seriously am obsessed. I think about pizza all the time. I eat pizza all the time. I make pizza all the time. I have Pizza socks.

And I love to make dough. I love our sourdough starter (first name Zelda). I love great wheat and flour. I love our grain mill. I love developing gluten. I love folding dough. I love the aroma of properly fermented dough. I love when the dough is perfectly proofed. I love to stretch and shape it.

I love pizza toppings: so many flavors, textures, cheeses, meats, veggies. I love topping a just shaped pizza. I love launching the pizza into the oven and the smell of the toasting crust. I love pulling the pizza at just the right moment, and finishing with some olive oil, or a crunch of salt or twist of pepper.

And then, I LOVE to take a breath, admire the beauty of the slice, and take my first bite of pizza!
